Instant Pot BBQ Pork Jamaican Style Recipe
In the summer, I can just not get enough of my Instant Pot!
I love being able to make a delicious recipe without heating up the whole house with the oven, or feeling the heat in front of the grill.
(I love it in the winter, too, when we’re super busy and craving hot and healthy comfort food.)
This super simple instant pot recipe will transport your tastebuds to the Caribbean for some Jamaican-style BBQ Pork.
If you’ve ever been to the Caribbean (or even a local Caribbean restaurant) you know how flavorful and tender the food is, especially jerk chicken or pork. That flavor and tenderness is thanks to a good marinade and low, slow cooking that not only builds the flavor, but slowly cooks down the connective tissue in the meat, making it so tender that it just melts in your mouth.
Thanks to your instant pot, you can replicate the effects of that low, slow cooking time in less than an hour!
This Instant Pot BBQ Pork recipe comes out tender, juicy and delicious, with some serious flavor (and your preferred level of spicy heat). It’s so incredibly tender, you can just shred it with your fingers! If you want this recipe to be less spicy, just opt for less jerk seasoning.
For this recipe, I opted to use a bone-in roast which is cheaper and tougher – but you wouldn’t know it to taste the final result!
One of the things I love about this recipe is how versatile it is to serve. You can serve it on it’s own, in bowls, or you can make sliders, sandwiches, wraps, serve it on rice (or cauliflower rice), etc etc.
Can BBQ Pork be frozen? Yes! You can freeze this recipe at several different stages, depending on what you have time for. I personally prefer freezing meat before it is cooked as it will retain more moisture that way and be less vulnerable to freezer burn. However, you can cook this recipe fully and freeze portions of it after. Freeze for up to 3 months in an airtight zip-top bag or freezer container.
For my low carb friends, this recipe comes in at 10g net carbs per serving which I consider approximately 1 cup of the pork and 1/2 cup of vegetables. The BBQ sauce that you use as the base of the sauce needs to be low-carb (less than 12g net carbs per cup) to keep the net carb count low.

*Note: you will notice in the video, we cooked the roast on it’s own for 30 minutes and then added the sauce and cooked for an additional 30 minutes. This was to prevent the sauce from burning, but adding a bit of water will prevent the burning and avoid the annoyance of having to stop the cooking process and take on additional steps.
Ingredients for Instant Pot BBQ Pork
Jamaican Style
- Olive oil
- Jamaican jerk seasoning
- Pork roast
- Red onion
- Rainbow Bell Peppers
For the Jamaican BBQ Sauce:
- BBQ sauce of your choice
- Mango
- Hot pepper
- Red bell pepper
- Salt & pepper
- Jamaican jerk seasoning
How to Make Instant Pot BBQ Pork
Using a smoothie style blender, combine the sauce ingredients (BBQ sauce, mango, hot pepper, bell pepper, salt, pepper and additional jerk seasoning). Set aside.
Rub the pork roast with 2 Tablespoons of olive oil and then rub on the jerk seasoning.
Set your Instant Pot to the SAUTE setting and add 2 Tablespoons of olive oil.
Once the oil is hot, add the red onion and sauté 2 minutes.
Add the pork roast skin side down and sear until golden color is achieved, about 2-3 minutes. Sear each side of the roast.
Pour the sauce all over the roast and add 1/2 cup of water.
Secure the Instant Pot lid and set Instant Pot to MANUAL for 50 minutes.
Natural release.
Remove the pork to shred or slice, as desired.
Before dealing with the pork, sprinkle the chopped rainbow bell peppers into the Instant Pot.
Select SAUTE setting and cover with instant pot lid. Allow to cook for 3 minutes.
Once the pork is shred or sliced up, add back to the Instant Pot.
Serve on rolls, tortillas or a bed of rice.
