My daughter and I have been on a bit of a caramelized onions kick recently, and our most recent experiment resulted in this decadent pork chop recipe.
On a whim, I decided to add a bit of beef broth to our onions as they simmered away and when I tasted them I immediately thought of French Onion soup! Well, the only thing missing was to add a generous slice of mozzarella cheese on top of each pork chop, which I naturally was more than happy to do.
While I think this entire dish is just scrumptious, the real star here is the gravy and those onions! I love that I was able to serve my daughter half of an onion and she ate it up eagerly. Next time I make this recipe, I’m going to double the caramelized onions because they were such a hit (and who couldn’t use a bit more vitamin D in their diet?)

This recipe also works well if you swap out the pork chops for chicken breasts or steaks, and it reheats nicely.

This decadent French Onion Pork Chop recipe is delicious, healthy and low carb. Perfect for meal prepping or a special meal that tastes like a cheat day meal!
Ingredients
- 2 Tablespoons coconut oil
- 2 Tablespoons butter
- 2 onions, sliced
- 1-2 teaspoons balsamic vinegar
- 4 pork chops
- Salt and pepper, to taste
- 1 teaspoon herbs de Provence, optional
- 1 cup broth
- 1 Tablespoon arrowroot powder
- 4 slices mozzarella cheese (approximately 1 cup)
Instructions
- Place half of coconut oil and butter in a large skillet over medium heat.
- Add onions and saute for 3-4 minutes until translucent, then add 1/2 cup broth and the vinegar.
- Continue cooking for about 10 minutes until onions absorb all liquid.
- Meanwhile, season the pork chops with salt, pepper and optional herbs de Provence.
- Remove onions from skillet and add remaining oil and butter.
