Low-Carb Pizza Crust Recipe
Pizza is hands down my favorite junk food.
When I recently had to fast for 48 hours for a medical procedure, the first thing I ate when I was allowed to? Pizza.
While I still allow myself a cheat meal of real, take-out pizza every once in awhile, I’m super happy to have found this low carb pizza dough for when I’m having a serious pizza craving but I don’t want to stop my progress.

Why You’ll Love this Low-Carb Pizza Dough:
Keto-friendly indulgence. This dough keeps net carbs ultra-low while nailing authentic pizza texture for diet-compliant cheat meals.
Quick and effortless prep. Ready in 20 minutes with basic steps, ideal for busy weeknights or pizza emergencies.
Versatile beyond pizza. Shape into focaccia, buns, or minis, expanding low-carb options without extra recipes
For my low carb friends, if you cut it into 6 slices, this pizza works out to 1.2g net carbs per slice before toppings. (If you cut it into 8 slices, it’s 0.9g net carbs.)

- Cream cheese – adds creaminess and helps bind the dough for a smooth, pliable texture—opt for full-fat blocks without additives for best melt.
- Mozzarella cheese, shredded
- Eggs, beaten – act as a binder for cohesion.
- Almond flour – provides nutty structure and low-carb bulk—choose finely ground blanched for lighter, less gritty results.
- Salt and pepper, to taste
Tip: you can prep the crust the night before and refrigerate until you’re ready to top with eggs and quickly cook for an easy weeknight supper.
Suggested Swaps and Variations
- Swap almond flour for coconut flour (use 1/3 cup) for a nut-free, bread-like crust, adjusting eggs as needed for absorbency.
- Use dairy-free shredded cheese and almond milk cream cheese for vegan adaptation, noting slight carb increase.
- Add garlic powder, Italian seasoning, or psyllium husk to the dough for extra flavor and chew.
- Make thin-crust minis or stuffed calzones by dividing dough and reducing bake time.

Fathead Pizza Dough FAQs
Tom Naughton shared the original recipe in 2013 and is named after his documentary (you can watch the trailer and the full movie here). It’s a grain-free, low-carb pizza crust alternative made from cheese, almond flour and eggs.
You can use fathead pizza dough to make low carb pizza, cheater focaccia bread, or for dinner buns.
Now, I like to bake my dough until I get a golden, crunchy exterior, but you definitely can cook yours a bit less to your own personal preferences. You can also make mini individual pizzas with this recipe, just be sure to reduce the baking time accordingly.
Yes! The method I recommend is to bake the crust (without toppings) and then it can be stored in the fridge for up to 3 days (some people have told me it can last up to 10 but we never last that long), or wrapped in the freezer for up to 2 months.
Cheeses may need more mixing or cooling; knead on parchment with almond flour dusting.
Substitute coconut flour for almond flour in reduced amounts for similar results.
