Tuscan Grilled Chicken Pizza Recipe
Everyone loves a good pizza, but sometimes the old pepperoni and cheese can get dull. We love mixing it up with our Tuscan Grilled Chicken Pizza.
The entire family enjoys this recipe because instead of the traditional pizza sauce we change up the flavors by using pesto! Pesto is a combination of olive oil, basil and pine nuts (and sometimes parsley) blended until it becomes a smooth paste. It brings a nice aromatic presence with minimal ingredients.
(If we have leftover pesto, I use it in everything from mashed cauliflower, salads, pasta, as a sandwich spread, etc.)
But the flavor doesn’t stop there! We also layer on Italian cheese and roasted red peppers for a pizza that tastes straight out of Tuscany. Grilled chicken adds in a dose of protein and some umami flavor.
Not only does this unique pizza recipe taste amazing, it’s also a healthy alternative to the standard delivery fare.
This is an easy weeknight pizza saving you the hassle of having to order out. My daughter enjoys making this pizza with me – it’s something we started doing when she was young and it’s a tradition we both enjoy. (Delivery can’t hold a candle to that!) You can also get extra dough and make individual pizzas for each family member, or try making several pizzas with all different toppings and taste test to find your favorite!
Can this pizza be frozen? Absolutely! You can freeze this pizza at several stages. You can freeze the dough and pesto sauce (and even the grated cheese). You can freeze the assembled but uncooked pizza. Or you can freeze the cooked pizza. Whatever works best for you. Whatever stage you choose to freeze your pizza at, store it in an airtight zip-top bag or container and use it within 3 months of freezing.
For my low-carb friends, this pizza varies in net carbs depending on the dough you use. One slice of this pizza using a standard pizza dough can be anywhere from 5g to 10g net carbs. If you use a low-carb dough like our fathead pizza dough (which works out to less than 1g net carb per serving) this pizza works out to 3.2g net carbs.

- Pizza Dough of choice
- Mozzarella, shredded
- Basil
- Parsley
- Pine Nuts or Sunflower Seeds, optional
- Garlic Cloves
- Olive oil
- Red Bell Pepper
- Chicken Breast, grilled and sliced
- Salt & Pepper
How to Make Tuscan Chicken Pizza
Preheat oven or grill to 450 degrees F.
In a single serve style or regular blender, add basil, parsley, pine nuts, garlic, olive oil and a pinch of salt & pepper. Blend to make the pesto. Taste and adjust.
Roll out pizza dough onto your desired pan or grill plate.
Brush dough with pesto. Top with mozzarella, red peppers and grilled chicken.
Bake for 10-15 minutes or until dough edges are golden and cheese is fully melted and bubbly. Let rest for a few minutes before cutting.
