Tender, Juicy and Delicious is what you get in 1 hour with this Instant Pot recipe. We elevated a basic BBQ sauce with simple tweaks to make this Instant Pot BBQ Pork perfect.
Instant Pot BBQ Pork Jamaican Style
Instant Pot BBQ Pork
- 1 3-4lb pork roast
- 1 red onion, sliced
- Rainbow Bell Peppers, sliced
- 1- 12 oz. bottle BBQ sauce, your choice
- 1 mango, ripe
- 1 hot pepper, your choice (we used a small piece of habanero)
- 1 red bell pepper, chopped
- 1 tsp Jamaican jerk seasoning
- pinch of salt & pepper
- Olive oil
Rub the pork with the Jamaican jerk seasoning and Olive oil.
Set your Instant Pot to the SAUTE setting. Add Olive oil and red onion. Saute 1-2 minutes.
Add the pork roast skin side down and sear until golden color is achieved. Sear each side.
Cover and set Instant Pot to MANUAL for 30 minutes. Allow to vent.
Add half of the sauce. Cover and run another cycle of MANUAL for 30 minutes.
Prepare the sauce:
Using a blender – puree ALL sauce ingredients. Simple. Done. An elevated BBQ sauce.
Remove pork, chop or shred. Change setting to SAUTE.
Add bell pepper slices to juices. Once the mixture starts to boil shut off the Instant Pot.
Stir in chopped pork with remaining sauce. Cover and let stand for 2-3 minutes.
Serve on rolls, with tortillas or just eat as is!
